United Airlines expands Chef's Table menus with 30 dishes

United Airlines' Chef's Table collaboration brings together 11 renowned chefs to create 30 dishes for United Polaris passengers, include the grilled rack of lamb by Chef David Barzelay
United Airlines is expanding its collaboration with Chef's Table, the brand behind the Emmy Award-winning Netflix series, introducing 30 dishes for United Polaris international Business Class passengers beginning November 1.
The latest menu rotation features appetizers, salads and entrées developed by 11 chefs across ten cities, highlighting regional flavors from the airline's U.S. hubs and international gateways.
The expansion follows the program's August 1 debut, which has served more than 60,000 passengers. According to an October 29 news release, satisfaction scores for Chef's Table meals were nearly 20 points higher than other preordered meals.
"The strong response to Chef's Table reinforces the value of bringing perspectives of world-class chefs onboard in a way that reflects the destinations we serve and the dining experiences our customers seek," said Aaron McMillan, Managing Director of Hospitality Programs, United Airlines.
The new selection includes spiral meat lasagna with passato and taleggio sauce from Los Angeles-based Chef Nancy Silverton of Osteria Mozza, grilled rack of lamb with carrot barbecue sauce from San Francisco's Chef David Barzelay and grilled halibut with parsley garlic potatoes from London's Chef Tomos Parry.
Other participating chefs include Fariyal Abdullahi, Jenner Tomaska, Justin Yu, Penelope Wong, Isabel Coss, Matt Conroy, Manu Buffara and Tashi Gyamtso.
The dishes will be available on select flights serving lunch or dinner departing from the cities that inspired the menus.
United Polaris passengers can preselect Chef's Table meals through United.com or the airline's mobile app from five days to 24 hours before departure.
The menus will be served from November 1 to December 31, with seasonal rotations continuing into 2027.
Beyond dining, United is bringing the stories behind the dishes to its inflight entertainment system through exclusive Chef's Table content available on seatback screens.
Passengers can explore the chefs' culinary inspirations, ingredients and creative processes, alongside select episodes of the Chef's Table: Talks podcast hosted by David Gelb, creator of the Netflix series.
The collaboration builds on United's broader investment in onboard dining, following more than US$150 million invested in food and beverage enhancements in 2025.
