AeroChef launches digital food safety compliance module for inflight catering

AeroChef has announced Aero-HACCP (AHP), a new module that brings digital Critical Control Point (CCP) checklists and end-to-end traceability — from item reception checklist through to onboard delivery on flights — to airline catering operations. Aero-HACCP will be available to airlines, caterers and inflight service providers worldwide starting October 1.

Inflight catering kitchens operate under some of the strictest food safety standards in the industry, yet many still rely on paper-based logs to track critical control points such as reception, thawing, cooking, chilling and dishing, the August 29 press release noted. Aero-HACCP replaces paper checklists with a tablet-based system built specifically for inflight kitchens.

The digital module includes:

  • Critical Control Point checklists — digital checks covering reception, thawing, cooking, chilling and dishing, replacing paper logs at every stage of food handling.
  • Digital record keeping — every CCP check is captured and stored automatically, eliminating paperwork and the risk of lost or incomplete logs.
  • End-to-end traceability — full visibility from the item reception checklist through to onboard delivery on flights, giving kitchen managers and auditors a complete, verifiable record of every meal's journey.
  • A simple tablet app — a fast, purpose-built interface designed for use on the kitchen floor by catering staff, not office administrators.

Built into the platform
Aero-HACCP runs on the same platform that already holds AeroChef's flight schedules and menu plans for standard and special meals by flight. Because that data already exists in the system, there is no re-keying of flight or menu information into a separate app — kitchen teams only need to complete the time and temperature checks against records the platform already has. That difference makes compliance faster to complete and far less prone to the data-entry errors that come with running a separate, disconnected food safety tool, the company said.

According to AeroChef, early feedback from catering customers points to four core gains: consistent food safety compliance with global standards, time saved by automating manual checks and reducing errors, complete visibility into every step of the process in real time and greater trust with airline customers and regulators who can see a verifiable digital record.
