TAP highlights Portuguese heritage in long-haul Business Class menu

Chef Diogo Rocha introduces the Local Stars project

TAP Air Portugal highlighted the creations of star chef, Diogo Rocha, in a LinkedIn post this week, as part of its TAP the Local Stars project. Through this initiative, the airline has invited 12 chefs to create 12 special menus. For the months of November and December, TAP is celebrating the heritage of Central Portugal with a menu curated by Chef Diogo Rocha.

Originally from the Viseu Region, the airline said Rocha enjoys blending modern and classic elements of Portuguese cuisine while using the finest regional and national ingredients. Rocha has one Michelin Star and a Green Michelin, awarded for his commitment to environmental sustainability.

Codfish takes center stage as Rocha’s leading ingredient. It is a renowned menu item in Portuguese cuisine from which he draws inspiration for his dishes.

The main course on Rocha’s menu is the cod with creamed potatoes and spinach. A starter of Guinea fowl and roasted asparagus salad precedes the dish and the meal ends with a Beiras apple pudding, cinnamon cream and almond for dessert.

“Nature has a lot to do with it, our inspiration,” said Rocha. “The project, Local Stars, links TAP and the Art of Tasting Portugal.”

Passengers can taste Rocha’s menu onboard TAP’s long-haul Business Class flights until the end of December.
