Hawaiian welcomes new chefs

Hawaiian Airlines has revealed the lineup of fresh talent in their Featured Chef Series, led by Executive Chef Lee Anne Wong of Honolulu’s Koko Head Café.

Beginning June 1, a new menu created by the collection of renowned chefs, under the guidance of Wong, will be featured on board Hawaiian's transpacific flights. The new faces featured in this collaboration include Mark “Gooch” Noguchi of Pili Group, Wade Ueoka of MW Restaurant, and Eric Oto of Hoku’s at The Kahala Hotel & Resort. Celebrity Chef Chang-Wook Chung of Seoul’s Kumsan Restaurant will continue to serve his award-winning fare to guests on inbound flights from South Korea.

Chefs that have been previously featured in the series include Jon Matsubara, Andrew Le of The Pig & The Lady, and Sheldon Simeon of Tin Roof Maui.

Renee Awana, managing director of product development at Hawaiian Airlines, commented in a May 15 press release: “The Featured Chef Series is a perfect way to share with guests a part of what Hawai‘i and Hawaiian Airlines are all about, which is authentic experiences representative of our unique and flavorful island culture. We are truly honored to include these incredible chefs and their amazing cuisine as part of our Hawaiian hospitality and unique onboard service.”

“This is an amazingly talented group of people who continue to play a big part in putting Hawai‘i on the map as a culinary destination,” said Wong. “It’s a great feeling to work alongside such a strong team and I look forward to wowing guests with our new menus!”

The timeline for the series to be rolled out is as follows:

June 1 – November 30, 2018: Chef Mark Noguchi, co-founder/chef of Pili Group
First Class North America to Hawai‘i

The menu will include Short Rib Beef Stew with Coconut Ginger Brown Rice; Mama Gooch’s Hiyashi Chuka Noodle Salad; Smoked Shrimp Dip with Crostini; Tofu Hekka with Long Rice Noodles; Portuguese Bean Soup; BBQ Pork Sliders with Hawaiian Sweet Bun; and Mushroom Frittata with Portuguese Sausage.

December 1, 2018 – May 31, 2019: Chef Eric Oto, chef de cuisine at Hoku’s
First Class North America to Hawai‘i

September 1, 2018 – May 31, 2019: Chef Wade Ueoka, co-owner/chef of MW Restaurant
All Cabins – Osaka, Tokyo and Sapporo to Hawai‘i

September 1, 2018 – May 31, 2019: Chef Chang-Wook Chung, owner/chef of Kumsan Restaurant
