“Tasting menus” designed for Hawaiian First Class
A new menu concept is taking shape on Hawaiian Airlines in a collaboration with Gate Gourmet announced May 1.
Passengers on Hawaiian’s First Class will be able to pair choices from a range of entrees from several types of cuisines.
An example is breakfast, where passenger can select two of three entrees, which are presented, with a plate of fruit. Lunch and dinner selections include spinach and feta cheese filled roasted eggplant roulade with sauce pomodoro and fried risotto or chicken tandoori with Makhani sauce and sultana basmati rice pilaf.
Gate Gourmet’s eGate Solutions group designed the tableware and tray setups and packing service. Also taking part was Beverly Gannon, a specialist in Hawaiian regional cuisine and owner of two restaurants on the island of Maui.
