The creations of top chef Renee Rischmeyer will be served to SWISS’s first and business class customers in March, April and May

Lucerne cuisine on SWISS Taste of Switzerland

Renee Rischmeyer of the Park Hotel Weggis on Lake Lucerne has created culinary fare for first and business class passengers in the latest installment in the SWISS Taste of Switzerland program.

Rishmeyer’s meals will be on the airline until the end of May. “SWISS customers can look forward to light and aromatic gourmet cusines that is strongly inspired by the French culinary tradition but deftly incorporates Mediterranean and Asian influences, too,” said a release from the airline.

Appetizers include a shrimp roll on sweet-and-sour mango chutney or roast lamb on crostini with tomato tarter and basil. First class hors d’oeuvres include zucchini rolls with melon and fresh cheese mousse and mint and marinated shrimp and artichokes. Chef’s recommended main courses are a filet of beef with Parmesan crust on Asian vegetable salad with black bean risotto. A selection of fresh cheeses is followed by dessert such as timbale of elderflower mousse with raspberries. Wine for the meal comes from the Swiss canton of Valais and a Château d’Armailhac Bordeaux.

In business class, passengers can feast on sliced smoked duck with couscous and mango salad along with the beef filet and Parmesan and a chocolate mousse with passion fruit and banana.
