Lufthansa launches Mediterranean fare
“Simple, light cuisine with a Mediterranean flair” will be launched this month on Lufthansa German Airlines with the help of Cornelia Poletto of Hamburg.
The menu of salad with wild herbs, pan-fried breast of quail and cashew nuts, along with seared anglerfish and Sicilian eggplant ragout will be available in first class. For business class, Poletto has developed a menu of marinated prawns with cannelloni beans and braised lamb shoulder au jus accompanied with ratatouille.
One of Hamburg’s young, dynamic chefs, Poletto has worked with Heinz Winkler a three-star chef in Germany. She worked up to sous-chef at a three star Italian restaurant Anna e Sebastiano in Hamburg and now owns her own restaurant called Poletto in the Eppendorf district of Hamburg. She earned her first Michelin Star in 2002.
