Western Canton featured on Swiss

The SWISS Taste of Switzerland program will be featuring the cuisines of Canton Vaud and the creations of Didier Schneiter of the Beau Rivage Palace in Lausanne.

Schneiter’s menu picks will be served on First and Business class flights through the end of November. Schneiter has put together a first class menu stressing fresh seasonal ingredients and a selection that includes lamb filet mignon with autumn vegetables in a cremolata sauce and sage gnocchi. Traditional Swiss cheeses are topped off with a choice of desserts: an apple tart tatin with bourbon vanilla ice cream, fresh blueberries and crème fraiche. In business class, passengers receive a fillet of beef with shallot, and romanesco chanterelle mushrooms and roasted potatoes.

Swiss has picked three wines: a Yvorne AOC Clos de la George, Chateau Pontet-Canet AC Pauillac and one domestic, a Dezaley AOC Clos des Moines from the Lausanne region.
